Ingredients

Scale

Steak and Base Ingredients:

  • 2 lbs (0.9 kg) steak (filet, ribeye, sirloin)
  • 45 tablespoons (675 ml) avocado oil

Blackened Seasoning:

  • 2 tablespoons smoked paprika
  • 1 tablespoon cayenne pepper
  • 1 tablespoon onion powder
  • 2 teaspoons garlic powder
  • 1 teaspoon ground black pepper
  • 1 teaspoon salt
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried oregano

Parmesan Cream Sauce Ingredients:

  • 5 tablespoons (75 ml) butter
  • 10 cloves garlic, minced
  • 1.5 cups (360 ml) heavy cream
  • 2 green onions, diced
  • 1 teaspoon red pepper flakes
  • 2/3 cup (160 ml) parmesan cheese

Cheesy Mashed Potatoes Ingredients:

  • 4 lbs (1.8 kg) russet potatoes
  • 1 cup (240 ml) half and half, warmed
  • 6 tablespoons (90 ml) salted butter, melted
  • 3/4 cup (180 ml) monterey jack cheese
  • 1 teaspoon garlic powder
  • 3/4 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Cut steak into uniform 2-3″ bite-sized pieces. Coat thoroughly with avocado oil and homemade blackened seasoning. Allow meat to rest at room temperature for 10-15 minutes to ensure consistent cooking.
  2. Prepare potatoes by peeling and quartering. Submerge in cold water for 10 minutes to remove excess starch, then drain and boil in salted water until tender.
  3. Preheat skillet to medium-high heat. Add avocado oil and wait until it shimmers. Arrange steak pieces in single layer without overcrowding. Sear for 2 minutes without moving, then flip and cook additional minute to develop golden crust.
  4. Remove seared steak from pan. Add butter and minced garlic, sautéing until fragrant. Return steak to pan, coating in garlic butter. Transfer meat to foil-covered plate to retain warmth.
  5. In same skillet, create cream sauce by adding butter and remaining garlic. Gradually whisk in heavy cream, simmering for 3-5 minutes until slightly thickened. Incorporate red pepper flakes, green onions, and parmesan cheese, whisking until smooth.
  6. Mash drained potatoes with melted butter, warmed half-and-half, and shredded Monterey Jack cheese. Season with garlic powder, salt, and pepper. Mix until creamy and consistent.
  7. Plate mashed potatoes, top with steak bites, and generously drizzle parmesan cream sauce over entire dish. Serve immediately.

Notes

  • Customize spice levels by adjusting red pepper flakes or using alternative seasoning blends for different flavor profiles.
  • Select high-quality, well-marbled cuts like ribeye or sirloin for maximum tenderness and rich flavor in steak bites.
  • Create a gluten-free version by using cornstarch instead of traditional flour for thickening the cream sauce and ensuring dietary compatibility.
  • Prepare steak bites in advance by marinating and cutting meat earlier, then quickly searing just before serving to maintain optimal texture and juiciness.
