Ingredients

Scale

Chocolate Base:

  • 1.5 cups (300g) granulated sugar
  • 3/4 cup (95g) all-purpose flour
  • 2/3 cup (65g) cocoa powder, sifted
  • 1/2 cup (65g) powdered sugar
  • 1/2 cup (90g) dark chocolate chips, chopped
  • 1/2 tsp (3g) fine salt
  • 2 large eggs (112g), at room temperature
  • 1/4 cup (55g) vegetable or canola oil
  • 1/4 cup (55g) unsalted butter, melted
  • 2 Tbsp (30g) water
  • 1 tsp (4g) vanilla extract

Caramel Layer:

  • 2/3 cup (200g) sweetened condensed milk (half a 14 ounces can)
  • 1/4 cup (56g) unsalted butter, cut into chunks
  • 1/4 cup (50g) packed light brown sugar
  • 2 Tbsp (30g) light corn syrup
  • 1 tsp (4g) vanilla extract
  • 1/2 tsp (3g) fine salt

Shortbread Crust and Ganache:

  • 1/2 cup (113g) unsalted butter, at room temperature
  • 1 cup (125g) all-purpose flour
  • 1/4 cup (30g) powdered sugar
  • 1/4 tsp (1g) fine salt
  • 1/2 cup (120g) heavy cream
  • 2/3 cup (120g) dark chocolate chips

Instructions

  1. Combine sweetened condensed milk, butter, brown sugar, and corn syrup in a heavy saucepan over medium heat, stirring consistently until the mixture begins to bubble.
  2. Monitor the temperature with a candy thermometer, aiming for 212°F (100°C), which indicates the perfect caramelization point.
  3. Reduce heat to low, allowing the mixture to simmer gently while continuously stirring to prevent scorching and achieve a rich, medium caramel color.
  4. Continue cooking for 5-7 minutes, watching the consistency transform as the caramel thickens and develops a deep golden hue.
  5. Remove the saucepan from heat and incorporate vanilla extract and fine salt, stirring thoroughly to distribute the flavors evenly.
  6. Transfer the caramel to a separate container, letting it cool naturally to room temperature, which will help it set and develop a smooth, luxurious texture.

Notes

  • Precision matters when cooking caramel, so use a candy thermometer for accurate temperature monitoring to achieve the perfect consistency.
  • Low and slow heat prevents burning, ensuring a smooth and rich caramel texture without scorching the sugars.
  • Stirring continuously helps distribute heat evenly and prevents sugar crystallization, creating a silky-smooth caramel sauce.
  • For dietary variations, substitute dairy butter with coconut oil or vegan butter, and use a plant-based sweetened condensed milk alternative to make the recipe vegan-friendly.
